Camembert with Olive Oil Marinated Cherries and Shallots

serves 4-6


1/4 cup white wine

1 tablespoons Gil’s Cherry Balsamic

1 teaspoon granulated sugar

1/2 teaspoon San Fran Sea Salt

1/2 teaspoon mustard seeds

2 each shallots, peeled and sliced

1 cup fresh cherries, halved and pits removed

1/2 cup Gil’s Key Lime Extra Virgin Olive Oil

6-8oz wheel camembert cheese

crackers for serving


Place wine, balsamic, sugar, salt, and mustard seeds in a small saucepan, stir to combine. Bring the mixture to a simmer over medium heat, stirring occasionally, until the sugar and salt have dissolved, about 3 minutes. Place shallots and cherries in a sealable container, add liquid mixture and olive oil, stir to combine. Set aside to cool to room temperature, about 30 minutes.

Place camembert on a platter and top with marinated shallots and cherries. Serve with crackers on the side.
