1 cup flavored balsamic
12 thick slices baguette
3 tbsp. Extra Virgin Olive Oil
6oz. triple cream soft cheese or brie
1/2 cup fresh strawberries, sliced
1/2 cup fresh raspberries
1/2 cup fresh black berries
2 tbsp. powdered sugar
Bring balsamic vinegar to a simmer over medium heat in a medium pot. Simmer for 10-12 minutes or until reduced by half. Remove from the heat and let cool to room temperature or until slightly thick and syrupy.
Preheat grill to medium high heat. Brush baguette slices with oil and grill for 2-3 minutes or until toasted and lightly charred.
Top each with soft cheese and berries. Drizzle with reduced balsamic, sprinkle with powdered sugar and garnish with mint sprigs before serving.
