4 large portobello mushrooms (or 6-8 medium sized mushrooms)
4 tbsp. Chipotle Garlic Grille Sauce
1 cup red cabbage, shredded
1/2 cup red bell peppers, thinly sliced
1/2 cup green bell peppers, thinly sliced
1/4 cup radishes, thinly sliced
3 tbsp. Extra Virgin Olive Oil
2 tbsp. 4 Leaf Balsamic Vinegar
salt and pepper to taste
4 whole wheat hamburger buns, split
1/4 cup feta cheese, crumbled
Preheat grill to medium high heat and brush mushrooms with grille sauce. Grill for 3-4 minutes, flipping once, or until tender. Set aside until ready to assemble.
In a large bowl toss together cabbage, peppers, radish, oil and vinegar until coated and season to taste with salt and pepper.
Top buns with grilled mushrooms, slaw and feta cheese crumbles before serving. Have some extra grille sauce for extra saucy sandwiches.
