Key Lime Olive Oil Cake



 

makes 1 large cake (or 2 smaller cakes)


4 cups AP flour

3 tsp. baking powder

1 tsp. salt

2 sticks or 1 cup softened butter

2 cups sugar

8 eggs

2 cups Key Lime Olive Oil (approximately, 2 bottles)

1/3 cup whole milk

3/4 cup powdered sugar

garnish:

fresh strawberries

fresh blueberries

fresh blackberries

fresh raspberries

lime slices

Preheat oven to 350°F.


Sift together flour, baking powder and salt into a large bowl. In the bowl of an electric mixer fitted with a paddle attachment mix together butter and sugar until smooth. Add in eggs, milk and olive oil and continue to mix until smooth. Add in flour mixture, 1 cup at a time, and continue to mix forming a smooth batter.

Pour batter into a large, greased cake pan (or multiple cake pans) and bake for 30 minutes or until golden brown and cooked completely.

Let rest for 15 minutes before removing from the pan. Dust with powdered sugar and garnish with strawberries, blueberries, blackberries, raspberries and lime slices before serving.
