Ingredients:
Salad Dressing:
1 medium tomato, halved
2 tablespoons Gil’s Red Pepper Olive Oil
2 teaspoons capers
2 garlic cloves, peeled and minced
1 tablespoons Gil’s Kalamata Olive juice
1 tablespoon Gil’s Garlic Balsamic Vinegar
1/2 tablespoon honey
1/2 teaspoon Big Sur Cowboy Rub
Pinch of black pepper
San Fran Sea Salt, to taste
1 medium tomato, cut into wedges
1 cup cherry tomatoes, halved
1 cup Gil’s Kalamata Olives
1 cup canned chickpeas, drained and rinsed
3 tablespoons fresh parsley, chopped
4-6 anchovy fillets
2 tablespoons grated parmesan
Instructions
To make the salad dressing, grate the tomato into a large bowl, and discard the skin. Add the red pepper oil, capers, garlic, olive juice, balsamic, honey, and seasoning to the bowl with the grated tomato, and whisk to combine. Season to taste with salt and pepper.
Add the tomato wedges, cherry tomatoes, olives, and chickpeas to the bowl with the dressing, and gently stir to coat and combine. Transfer the salad to individual plates or a large platter and top with parsley, anchovies, and parmesan before serving.
