makes 4 burgers
2 lbs. ground beef
2 teaspoons salt
1 teaspoon cracked black pepper
1 cup manchego cheese, shredded
4 large burger buns
1 cup roasted red peppers, sliced
8oz. Spanish chorizo, sliced
1 cup yellow onion, sliced
2 cups baby spinach
1 cup Zesty Lemon Stuffed Olives, sliced
1/2 cup Roasted Garlic Champagne Mustard
Preheat gas grill or light charcoals for a charcoal grill. Form 8oz patties and season with salt and pepper. Grill for 3-4 minutes per side for medium. Evenly distribute manchego cheese to each burger and melt. Distribute burgers to buns and top with red peppers, chorizo, onions, spinach, Zesty Lemon Stuffed Olives and spread with Roasted Garlic Champagne Mustard.
