Serves 4-6
Ingredients:
1 cup roasted red pepper, diced
1 1/2 cups cooked chickpeas
1 garlic clove, peeled
1/4 cup tahini
2 tablespoons Gil’s Red Pepper Olive Oil
San Fran Sea Salt to taste
Garnish:
Big Sur Cowboy Rub
Fresh Cilantro, chopped
Roasted Red Peppers, diced
Toasted pitas or naan for dipping
Instructions:
Place peppers, chickpeas, garlic, tahini, and olive oil in a food processor, pulse until smooth. If your hummus is too thick, add a tablespoon or two of chicken or vegetable broth until desired consistency is reached. Season to taste with salt and garnish with cowboy rub, olive oil, cilantro, and diced peppers.
