Tapenade Rubbed Turkey

serves 4-6

1 10-15lb raw turkey

1 stick salted butter, melted

1 jar artichoke and olive tapenade


Preheat oven to 350°F. Stir together melted butter and tapenade until combined.

Baste turkey with 1/3 of the butter tapenade mixture and roast for 1 hour, tented with foil.

Remove from the oven and baste with another 1/3 of mixture. Tent, return to the oven and roast for another hour.

Remove turkey from the oven, baste with remaining mixture, increase oven temperature to 400°F and roast for 1 hour uncovered or until turkey is golden brown and cooked completely. Let cool for 30 minutes before slicing and serving.
