Tiramisu Chocolate Caramel Cookies:
1/2 cup salted butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 teaspoon vanilla extract
1 egg
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon kosher salt
1 1/2 cups tiramisu chocolate caramels
2 pints coffee flavored ice cream, softened slightly (left at room temperature for 2-3 minutes)
Preheat oven to 375 degrees F.
Cream together softened butter, granulated sugar and brown sugar, using a mixer fitted with a paddle attachment, until fluffy and smooth. Add in vanilla and egg and continue to mix until combined.
Sift in flour, baking soda, baking powder and salt. Blend until a thick cookie dough forms.
Fold in tiramisu chocolate caramels until evenly distributed into the dough.
Line a cookie sheet with parchment. Spoon 2 tablespoons of dough, spaced 2 inches apart on sheet and bake (middle rack) for 15-20 minutes or until cookies are thoroughly cooked and lightly golden brown.
Let cool completely.
Once cookies have cooled, make sandwiches by filling 3-4 tablespoons of coffee ice cream in between two cookies. Gently press down to spread out the ice cream and smooth edges with the back of a spoon. Wrap each sandwich individually in plastic and freeze for 3-4 hours before serving.
