Tomato Olive and Avocado Salad



 

serves 2-4

1 cup arugula

1 cup Zesty Lemon Stuffed Olives

1 cup Kalamata Olives

2 avocados, peeled and sliced

2 tomatoes, cut into wedges

1 cup parsley

1/4 cup 4 Leaf Balsamic Vinegar (or flavored balsamic vinegar)

1/8 cup California Extra Virgin Olive Oil (or flavored olive oil)


Toss salad ingredients together with vinegar and oil.
