What “oil‑cured” really means
Despite the name, the curing itself happens with salt, not oil. The oil only comes in at the end for storage and flavor. Multiple sources emphasize this misnomer: the olives are dry‑cured (salt‑cured) until they shrivel, lose bitterness, and develop a rich, fruity depth.
