This hearty and filling salad is loaded with tasty ingredients. We crafted a vinaigrette using our Blueberry Balsamic Vinegar. A sweet-tart vinegar fully infused with the fresh and vibrant flavor of blueberries. We filled these bowls with pasta, baby spinach, avocado, cherry tomatoes, red onion, and crispy bacon.

Ingredients:
Vinaigrette:
3 tablespoons Gil’s Blueberry Balsamic Vinegar
1 tablespoon Roasted Garlic Champagne Mustard
1 tablespoon honey
1 1/2 teaspoons Big Sur Bread Dipper
San Fran Sea Salt and pepper to taste
4 cups baby spinach
4 cups rotini pasta, cooked (according to the instructions on the package), drained, and rinsed
1 1/2 cups cherry tomatoes, halved
8 slices thick sliced bacon, cooked and chopped
1/2 cup red onion, peeled and sliced
1/2 avocado, peeled and sliced
Instructions
Place olive oil, blueberry balsamic, mustard, honey, and bread dipper in a medium bowl, whisk to combine the vinaigrette.
Divide spinach, cooked pasta, tomatoes, bacon, onion, and avocado between bowls and drizzle with vinaigrette.
