This simple chicken gyros recipe is an excellent option for casual weekday dinners. The chicken is marinated in a yogurt and Double Garlic Olive Oil combination, heartily seasoned with cumin, coriander, paprika, oregano, and lemon juice. The classic toppings of French fries, tomatoes, cucumbers, red onions, parsley, and tzatziki sauce pair perfectly with this very flavorful baked chicken.

Ingredients:
Chicken Marinade:
1/2 cup plain Greek yogurt
2 tablespoons lemon juice
2 tablespoons Gil’s Double Garlic Olive Oil
3 garlic cloves, peeled and minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1 teaspoon San Fran Sea Salt
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
Pinch of ground cinnamon
2 each boneless skinless chicken breasts
4 pitas, warmed
Toppings options: French fries, sliced tomatoes, sliced cucumbers, pickled red onions, fresh parsley, and tzatziki sauce.

Instructions
Place yogurt, lemon juice, olive oil, garlic, cumin, coriander, paprika, salt, oregano, black pepper, and cinnamon in a medium bowl. Whisk to combine the marinade. Place the chicken breasts in a sealable container or zipper bag. Add the marinade to the container and thoroughly coat the chicken. Refrigerate overnight.
Preheat oven to 425°F and line a medium baking sheet with aluminum foil. Lightly spritz the foil with cooking spray.
Add the marinated chicken to the prepared baking sheet and place in the oven. Bake for 15-20 minutes or until the chicken is cooked through. Remove from the oven and set aside to rest for 5 minutes before slicing.
Divide chicken between pitas and top with fries, tomatoes, cucumbers, onions, parsley, and tzatziki sauce. Garnish with lemon wedges before serving.
