Garlicky Chipotle Chorizo & Pineapple Pizza

Step aside Hawaiian pizzas, this Tex-Mex version is a winner! We used a trio of ingredients to season this pizza from crust to toppings, making sure every cheesy-chorizo mouthful is flavorful. Our Red Pepper Oil provides a touch of fiery heat that is soothed by the sweet pineapple. Our Double Garlic Olive Oil adds oodles of garlicky aromatics. And, our Chipotle Seasoning blend infuses the pizza crust and cheesy topping with savory herbs and spices.

Serves 6
Ingredients:
16 ounces raw pizza dough, thawed and divided in half
1 tablespoon Gil’s Red Pepper Oil, plus extra for drizzling
1 tablespoon Gil’s Double Garlic Oil, plus extra for drizzling
1 ½ teaspoons Big Sur Gourmet Chipotle Seasoning
1 cup mozzarella cheese, grated
½ cup pepperjack cheese, grated
1 cup cooked chorizo sausage, crumbled
1 cup diced pineapple
¼ cup pickled red onion, minced
¼ cup cotija cheese, crumbled
¼ cup fresh cilantro leaves
Instructions
Preheat the oven to 425°F.
Shape the dough into two, medium-sized, pizza crusts and place on baking sheets or pizza pans.
Drizzle the crust with red pepper oil and garlic oil and sprinkle with chipotle seasoning.
Evenly top the pizzas with mozzarella, pepperjack, chorizo, and pineapple. Place the pizzas in the oven and bake for 15 to 20 minutes or until the crust is golden-crisp and the cheese is bubbly.
Remove from the oven and set aside to rest for 2 minutes before topping with pickled red onion, cotija cheese, and cilantro. Drizzle with a little red pepper oil and garlic oil before slicing and serving.
