These carrots are out of this world! Nicely flavored with our All-Purpose Seasoning, cumin, coriander, and a kiss of nutmeg, these carrots are easy to prepared and well-matched with any meaty main. We also love crafting this recipe to be served with meatless mains, for a veggie-filled feast.
3 tablespoons Gil’s California Extra Virgin Olive Oil
1 lb multi-colored carrots, peeled and halved
1 tablespoon Big Sur All Purpose Seasoning
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
Pinch ground nutmeg
1 tablespoon maple syrup
1 teaspoon sesame seeds
Fresh herbs for garnishing
Preheat oven to 400°F. Heat oil in a large, oven-proof skillet over medium-high heat. Once hot, add the carrots, and sear on all sides until nicely browned. Season the carrots with seasoning, cumin, coriander, and nutmeg, stir to coat, and place in the oven. Roast for 15-25 minutes or until the carrots are tender. Remove from the oven and transfer to a serving plate or platter. Drizzle with maple syrup and sprinkle with sesame seeds and fresh herbs before serving.
