Ingredients:
1 each 12oz can or bottle of beer
2 tablespoons Gil’s Roasted Garlic Chipotle Grille Sauce
8oz shredded monterey jack cheese
8oz shredded cheddar cheese
1 tablespoon all purpose flour
2 tablespoons red onion, peeled and minced
1 tablespoon green chili pepper, diced
1/4 cup tomato, diced
2 tablespoons chopped scallions
2 tablespoons chopped cilantro
tortilla chips for dipping
Instructions:
Heat a large skillet over medium-high heat. Once hot, add beer and garlic grille sauce and whisk to combine, and bring to a simmer. Continue to simmer for 3-4 minutes or until the liquid reduces slightly. Reduce heat to low.
In a large bowl, toss to coat the cheese (both monterey and cheddar) with flour. Sprinkle the cheese mixture, a handful at a time, into the liquid, whisking to combine. Once all the cheese has been added and melted, remove the pan from the heat. Sprinkle queso with red onion, peppers, tomatoes, scallions, and cilantro. Serve with tortilla chips on the side.
