Pesto Party Dip

This easy pesto party dip is a tasty combination of EVOO and balsamic oven-roasted tomatoes & red onions with creamy burrata and our very tasty Artichoke Basil Almond Pesto. We love the combination of flavors that the pesto provides to this dip—garlicky, earthy, nutty, and herby. If you like caprese salads, you’ll love this appetizer!

Serves 12
Ingredients:
1 pint cherry tomatoes
½ cup red onion, peeled and sliced
2 tablespoons Gil’s Double Garlic Olive Oil
2 tablespoons Gil’s Garlic Balsamic Vinegar
1 teaspoon Big Sur Gourmet Italian Seasoning
16 ounces (4 balls each) burrata cheese
Fresh basil sprigs, for garnish
Crackers and crostini, for serving
Instructions
Preheat the oven to 400°F and line a large baking sheet with parchment.
Place the tomatoes and onions on the prepared baking sheet and drizzle with olive oil and balsamic. Sprinkle the veggies with the seasoning and place in the oven. Roast for 10 to 12 minutes or until the onions and tomatoes are tender and lightly browned.
Score the burrata balls and place on a serving platter. Top the cheese with the roasted tomatoes and onions and drizzle with the pan drippings.
Dollop with dip with pesto and garnish with fresh basil before serving. Serve with crackers or crostini for dipping and scooping.
