Caprese with Pesto Vinaigrette
This version of caprese utilizes our newest sauce addition, Artichoke Basil Almond Pesto, in a flavorful balsamic vinaigrette. The earthy artichokes, aromatic basil, and nutty almonds make for a tasty pesto sauce combination. We double down on the garlic too, using our Garlic Balsamic and Roasted Garlic Champagne Mustard to really infuse this vinaigrette with flavor. We love the appearance these multi-colored heirloom tomatoes and fresh basil bring to this classic caprese. When dressed with this pesto vinaigrette, this dish just pops. Great for a group!
2 tablespoons Gil’s Artichoke Basil Almond Pesto
1/4 cup Gil’s California Extra Virgin Olive Oil
1/8 cup Gil’s Garlic Balsamic Vinegar
2 teaspoons Gil’s Roasted Garlic Champagne Mustard
1 tablespoon honey
Pinch of cracked black pepper
4 large heirloom tomatoes, sliced
8oz fresh mozzarella, sliced
6-8 fresh basil leaves
Place pesto, olive oil, balsamic, mustard, honey, and black pepper in a medium bowl and whisk to combine the vinaigrette. Place slices tomatoes and mozzarella on a large serving platter and drizzle with vinaigrette. Garnish with fresh basil leaves before serving.
