Caramel Apple Oatmeal Cookies
Makes 2-3 dozen cookies
1/4 cup applesauce
3/4 cup Gil’s Grapeseed Oil
2 teaspoons vanilla extract
2 cups brown sugar
2 1/2 cups old fashioned oats
1 3/4 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon San Fran Sea Salt
1 teaspoon apple pie spice
1/2 cup caramel bits or toffee bits
1/2 cup dried apple rings, chopped
Preheat oven to 350°F and line 2 large baking sheets with parchment paper.
Place applesauce, grapeseed oil, egg, vanilla, and brown sugar in the bowl of an electric mixer fitted with the paddle attachment, stir until combined and blended.
In a separate bowl, place oats, flour, baking soda, salt, apple pie spice, caramel bits, and dried apple, stir to combine, and add to the mixing bowl with the wet ingredients. Stir to combine the cookie dough.
Using a small scoop or tablespoon measure, portion the cookie dough, and place 2-inches apart on the prepared baking sheets. Place in the oven and bake for 10-12 minutes or until the cookies are cooked through and lightly golden. Remove from the oven and set aside to cool on a wire rack.
