No Greek feast is complete without a Greek Salad! This classic recipe is heightened by the use of our Kalamata Olives and California Extra Virgin Olive Oil. Two of our finest and most popular ingredients. We even use our kalamata olive brine, seasoned with red wine and Greek seasonings, as a finishing drizzle over the composed salad. Simple, classic, and absolutely delicious!
Serves 4
Ingredients:
2 cups Campari or cherry tomatoes, cut into wedges or halved
2 cups cucumbers, sliced
1 green bell pepper, seeded and sliced
1/2 cup red onion, peeled and sliced
10-12 Gil’s Kalamata Olives
2 ounces feta cheese, sliced or portioned into chunks
4-6 pepperoncini peppers
2-3 tablespoons Gil’s California Extra Virgin Olive Oil
1-2 tablespoons kalamata olive juice
Pinch of black pepper
Pinch of dried oregano
Pinch of crushed red pepper flakes
San Fran Sea Salt, to taste
Instructions
Place tomatoes, cucumbers, bell pepper, red onion, kalamata olives, feta cheese, and pepperoncini peppers in a large salad bowl or serving platter. Drizzle the salad with olive oil, olive juice, and season with black pepper, oregano, and crushed red pepper flakes. Season to taste with salt before serving.
