Creamy tuna salad is joined by sun-dried tomatoes, crisp cucumbers, thinly sliced red onion, peppery arugula, and crumbly feta cheese. To highlight this combination of ingredients, we used our Garlic Balsamic and Basil Olive Oil as a delightful finishing drizzle. Tying into our Mediterranean-theme, we also used our Black Olive Tapenade, a rich and savory condiment that pairs so well with this recipe.
Serves 4
Ingredients:
1 large seeded Italian sandwich loaf or 4 individual seeded hoagie rolls
2 1/2 cups baby arugula
4 cups prepared tuna salad
1/2 cup sun-dried tomatoes in oil, sliced
1/2 cup Gil’s Black Olive Tapenade
1/3 cup feta cheese crumbles
1/2 cup red onion, peeled and thinly sliced
1 each cucumbers, thinly sliced
2-3 tablespoons Gil’s Basil Olive Oil
2-3 tablespoons Gil’s Garlic Balsamic Vinegar
Instructions
Split the loaf or hoagie rolls and stuffed with arugula, tuna salad, sun-dried tomatoes, tapenade, feta crumbles, red onion, and cucumbers. Drizzle the sandwich with olive oil and balsamic before serving.
