Pepper Oil and Peanut Broccoli Rabe
Idyllic spring greens simply made. This 5 ingredient recipe comes together in under 15 minutes and is a perfect side dish for any main meal.
1 bunch broccoli rabe, ends trimmed
4 garlic cloves, peeled and thinly sliced
1/8 cup roasted peanuts
3-4 tablespoons Gil’s Red Pepper Oil
salt and pepper to taste
Heat a large pot of salted water over high heat until boiling. Add broccoli rabe and garlic to the boiling water and blanch for 2-3 minutes, or until the rabe is tender. Using a fine mesh strainer remove the rabe and the garlic from the water and drain.
Plate rabe on a platter, top with roasted peanuts and drizzle with red pepper oil. Season to taste with salt and pepper.
