This smoky and spicy corn salad is the perfect side dish for Summer. The zesty combination of fresh lime juice, Habanero Tequila Olive Oil, Big Sur Mesquite Smoked Salt, honey, and garlic pair so well with the seasonal veggies and any BBQ’d goodies accompanying.

Serves 6
Ingredients:
Dressing:
3 tablespoons lime juice
3 tablespoons Gil’s Habanero Tequila Olive Oil
2 tablespoons honey
2 each garlic cloves, peeled and minced
1/4 teaspoon Big Sur Mesquite Smoked Salt
Pinch paprika
1 lb. frozen corn kernels, thawed
2/3 cup cucumber, diced
2/3 cup tomatoes, diced
1/2 cup red onion, peeled and diced
1/4 cup fresh cilantro, chopped
San Fran Sea Salt, to taste
Instructions
Place lime juice, olive oil, honey, garlic, smoked salt, and paprika in a large bowl, whisk to combine the dressing.
Add the corn, cucumbers, tomatoes, red onion, and cilantro to the bowl, stir to combine. Season the salad to taste with salt and refrigerate until ready to serve.
