Southwest Turkey Burgers with Mashed Avocado & Pineapple Salsa

This sweet and zesty turkey burger recipe is a fan-favorite! We used Pepper Plant’s BBQ Sauce as our primary seasoning and glaze for these burgers. Infusing each with fiery hot peppers and sweet and sour flavors. The mashed avocado and pineapple salsa mellows and harmonizes with the zesty BBQ sauce, making for a very balanced burger.


Serves 4


Ingredients:


Pineapple Salsa:

1 cup pineapple, diced

1/2 cup tomatoes, diced

1/4 cup red onion, peeled and minced

1/4 cup fresh cilantro, chopped

1 tablespoon lime juice


1 1/2 lbs. ground turkey

2 teaspoons Big Sur Cowboy Rub


4 burger buns, split and toasted


2 avocados, peeled and mashed

1/2 cup fresh cilantro leaves

Big Sur San Fran Sea Salt to taste


Instructions


Preheat a gas grill to medium-high heat or prep charcoals for a charcoal grill. Lightly brush the grill grates with olive oil to keep the burger from sticking.

Place pineapple, tomatoes, onion, cilantro, lime juice, and salt in a medium bowl and stir to combine the salsa. Set aside or keep refrigerated until ready to assemble the burgers.

Divide ground turkey into 4 even patties and generously season each with cowboy rub. Place on the grill and cook for 5 minutes per side, basting the burgers with BBQ sauce every 2 minutes or so, until cooked through. Once cooked through, remove the burgers from the grill and baste in any remaining BBQ sauce.

Spread toasted burger buns with mashed avocado and top the avocado with fresh cilantro leaves. Add grilled BBQ burger patties to the buns and generously top with pineapple salsa before serving.
