This spicy and refreshing cucumber & onion salad will be a big hit at your next potluck or BBQ (especially if you’re serving a crowd that like things spicy). The zesty combination of Red Pepper Olive Oil, Cowboy Rub, lime juice, garlic, sugar, and salt are a match made in heaven for the crisp-fresh cucumbers.

Ingredients:
Dressing:
3 tablespoons lime juice
3 tablespoons Gil’s Red Pepper Olive Oil
3 teaspoons granulated sugar
2 garlic cloves, peeled and minced
1/2 teaspoon Big Sur Cowboy Rub
1/2 teaspoon salt
3 cups cucumbers, sliced
3/4 cup yellow or white onion, peeled and sliced
1/4 cup fresh scallions, chopped
Instructions
Place lime juice, olive oil, sugar, garlic, cowboy rub, and salt in a large bowl, whisk to combine the dressing, and set aside to rest for 10 minutes (or until the salt and sugar have dissolved).
Add the cucumbers and onion to the bowl, and toss to combine. Refrigerate for 30 minutes before garnishing with scallions and serving.
