makes 2 small pizzas
2 tbsp. Extra Virgin Olive Oil
2 naan or pita bread
1/2 cup chorizo sausage crumbles, cooked
1/4 cup cheddar cheese, shredded
1/4 cup black beans, drained and rinsed
1/8 cup queso fresco crumbles
1/8 cup red onions, peeled and minced
1/8 cup tortilla chips, crushed
1 tbsp. fresh scallions, chopped
1/8 cup Zinful Garlic Salsa
2 tbsp. sour cream
Preheat grill to medium high heat. Brush naan bread with oil and grill on one side until toasted and lightly charred. Remove from the grill and place on a cookie sheet, grilled side up. Top with chorizo, cheddar, beans and queso fresco. Reduce grill temperature to medium low and return the pizza to the grill. Cover and cook for 4-5 minutes or until crust is toasted and cheese is melted.
Top pizza with onions, crushed chips, scallions, salsa and sour cream before slicing and serving.
