Olive Oil & Jam Thumbprint Cookies

makes 2 dozen cookies


Ingredients:


2/3 cup granulated sugar

2 eggs

1 teaspoon vanilla extract

2 1/4 cups all purpose flour

1/2 teaspoon San Fran Sea Salt

1/2 teaspoon baking powder

assorted fruit jams


Instructions:


Preheat oven to 350°F. Line two large baking sheet pans with parchment paper.

Place olive oil, sugar, eggs and vanilla in the bowl of a stand mixer fitted with the paddle attachment. Beat until smooth and combined. Add flour, salt and baking powder to the bowl, mix on a lower speed until combined and dough forms. Using a small scoop or tablespoon measure, portion cookie dough, roll into a ball and place each, 2 inches apart, on the prepared baking sheets. Using your thumb, press deep imprints into the center of each cookie and fill with jam.

Bake cookies for 10-15 minutes or until slightly golden around the edges. Remove from the oven and let cool to room temperature (ideally, elevated on a wire rack or cooling rack).

This recipie worked well for me. Id say use more flour. I used maybe a cup more than called for. Also I didn't chill them, if anyone else was wondering if you still need to. The taste is a little different, but still good. I would make again.

Yummy! I wanted to make jam filled cookies today but didn't have much butter. After awhile of searching for recipes using oil I found this one, I was unsure since there were no comments but decided to try it since I really wanted to make these cookies. I substituted a few things: Grape Jelly instead of Sugar and Karo for Vanilla extract, it also took me more than 2 1/4 cups of flour, I think I used about 4 cups. Overall it turned out surprisingly Good.
