Sea Salt Roasted Radishes with Goat Cheese
A combination of creamy, citrus zested and garlicky sauce with roasted radishes is a match made in culinary heaven. A great spring side dish.
Creamy Garlic Spread:
1/4 cup fresh garlic, peeled
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon lemon zest
1 teaspoon salt
1/4 cup heavy cream
1 bunch radishes, tops removed split
2 tablespoons Gil’s California Extra Virgin Olive Oil
2 teaspoons Gil’s San Francisco Sea Salt
2 tablespoons goat cheese crumbles
Preheat oven to 425°F.
Combine creamy garlic spread ingredients in a food processor (garlic, olive oil, lemon juice, zest and salt) and pulse until smooth. Scrape mixture into a medium bowl and stir in heavy cream until blended. Keep refrigerated until ready to serve.
Toss radishes in olive oil and sea salt. Place on a baking sheet and roast for 8-10 minutes or until tender. Remove from the oven.
Spread creamy garlic sauce on the bottom of a serving platter or plate and top with roasted radishes, goat cheese crumbles and leafy greens.
