This spicy and savory combination of Habanero Tequila infused Olive Oil and Big Sur Cowboy Rub really highlights the tangy feta, sweet onions, fragrant garlic, and fresh herbs. 1/2 cup Gil's Habanero Tequila Olive Oil
1 doz cipollini or pearl onions, peeled and halved
3 garlic cloves, peeled and sliced
1/2 lemon, zested
1/2 lime, zested
1 1/2 teaspoons Big Sur Cowboy Rub
1 (10oz) jar Gil's Mother Earth Sicilian Olives
8oz block feta, sliced
Fresh sprigs of oregano and cilantro
Toasted bread for dipping and sopping
Preheat oven to 350°F. Pour olive oil into a medium baking dish and top with onions, garlic, lemon zest, lime zest, cowboy rub, and olives. Place in the oven and bake for 15 minutes. Remove the baking dish from the oven and add the feta slices, nestling the cheese into the mixture as best as possible. Return to the oven and bake for another 15 minutes or until the cheese has softened and the onions are tender and lightly caramelized. Garnish the baked feta with sprigs of oregano and cilantro, serve with toasted bread on the side for dipping and sopping.
