This hearty and healthy salad is chock full of tasty vegetables and savory lean protein. Ingredients:
Salad Dressing:
1 tablespoons Gil’s Mother Earth Sicilian olive juice
1 tablespoon Gil’s Balsamic Vinegar of Modena
1 tablespoon honey
1 tablespoon Gil’s Roasted Garlic Champagne Mustard
1/2 teaspoons Big Sur Seafood Seasoning
2 cups orzo, cooked and cooled
1/2 cup sun-dried tomatoes, sliced or diced
1 cup baby spinach, chopped
1 bunch asparagus, quartered, steamed and cooled
2 smoked salmon fillets, flaked into bite-sized pieces
2-3 tablespoons feta cheese crumbles
Instructions
Place olive juice, balsamic, honey, mustard, olive oil, and seasoning in a large bowl, and whisk to combine the vinaigrette.
Add the cooked orzo, tomatoes, olives, spinach, asparagus, and salmon to the bowl with the vinaigrette, and gently stir to combine the salad. Divide between plates or bowls and sprinkle with feta before serving.
